Junior Sous Chef

Purpose of position
Your moment to be exceptional has arrived at The Rees Hotel, Queenstown! The Junior Sous Chef is responsible for planning and organising the preparation, cooking and creation of high quality dishes as a member of the kitchen team. The job holder should also be able to work independently and be self sufficient with an emphasis on impeccable hygiene practices.

Skills, experience and attributes
Have at least 3 years' relevant prior experience in high quality properties, or a similar role
In-depth understanding of Food Safety and impeccable hygiene practices
Essential that you hold a relevant industry qualification(s)
Professional Chef or Cook qualification highly desirable
Accuracy and an “eye for detail”
Passionate about “Customer Service/Care”
Be able to work autonomously with excellent time management skills
Confident in providing input to our Executive and Sous Chefs, estimating food and labour costs, and ordering food supplies
May select and train staff

Hotel Duty Manager
Bring your strong hospitality front office experience to an award winning hotel team. The Rees Hotel, Queenstown is accepting applications for an experienced hospitality professional.

Purpose of Position
Our Hotel Duty Managers play a key leadership role at The Rees Hotel. As the first point of contact for the hotel you will be customer service driven and enjoy exceeding customers’ expectations.

Responsibilities
Perform Front Office and Hotel Reception Duties
Responsible for explaining and ensuring the Health, Safety and Wellbeing of the Front office whilst on shift
Responsible whilst on shift for ensuring the smooth running of the front desk and related activities, identifying improvements to be made
Supporting on shift team member performance and development, and highlighting any team member matters that require attention
Maintaining attendance records and rosters
Allocating tasks and duties to Housekeeping, Concierge, and Food and Beverage Departments
Being the allocated Duty Manager for conferences and events, where required

Skills, Experience and Attributes
At least 2 years’ experience in a Duty Manager position in a high quality property
Hold a relevant industry qualification (Diploma/Degree Level)
Accuracy and an “eye for detail”
Passionate about “Customer Service/Care”
Ability to multi-task in a busy hotel
Be able to work autonomously with excellent time management skills
Have strong initiative and ability to think outside the square
Excellent verbal and written English language communication skills
A second language is desirable

Food & Beverage Operations Manager Extraordinaire – Shape your 5-Star Future

The Food & Beverage Operations Manager is of vital importance to the continued and ongoing success of The Rees Hotel Queenstown – where our guests are not an important thing; they're everything! The Rees Hotel Queenstown is a multi-award winning five star Qualmark rated property that prides itself on providing a supreme, unique and truly memorable guest experience – for all the right reasons.

Position Profile

Your responsibilities will include -

  • Overseeing all Food & Beverage services in the hotel, including our award winning True South Fine Dining Restaurant, Bordeau Lobby Bar, Conferencing, and Minibar.
  • Ensuring that our 5-Star standards and service are maintained and, wherever possible, exceed at all opportunities.
  • Interacting with guests and maintaining a profile in and around the hotel
  • Managing the Food & Beverage Team, including regular feedback conversations, formal appraisals and performance development through coaching and relevant training.
  • Preparing rosters, completing payroll information and undertaking month-end stock takes.
  • Providing strategic input on the direction, standard and demand of our F&B offerings.
  • Managing and ordering stock, monthly stocktaking and controlling budgets.
  • Complying with and ensuring the Department follows the company's Health and Safety Plan, Security standards and Food Control standards; prior experience in Health & Safety – highly desirable

Skills, Experience and Knowledge

  • At least five years' Food & Beverage management experience in high quality properties
  • Hotel Industry knowledge a distinct advantage
  • Demonstrated commercial capability to drive profit, control costs and build customer loyalty
  • Excellent command of the English language, both spoken and written
  • Highly organised, with good computer literacy in Microsoft Products and restaurant/hotel management systems
  • Relevant tertiary qualification and current LCQ an advantage
